Mom's Meat Loaf

Set oven to 350

2lbs 90% ground beef
1/2 onion, chopped
2 cloves garlic, minced
1 carrot, grated
1 zucchini, grated
1- 4oz can Hatch mild green Chile's,                    drained
1-16oz can Diced tomatoes, drained
1 sleeve saltine crackers, crushed
1/2 tsp salt
1/2 tsp pepper
1-5oz can V-8
1 small can tomato paste
Heinz ketchup

Use a large mixing bowl

Crush the crackers in the sleeve by squeezing until fairly fine.
Chop the onion and mince the garlic
Grate the carrot and zucchini
Add the drained chiles and tomatoes
Add the can of V8 juice

Mix and let it soak for 10 minutes

Add meat and mix together. Use your hands to mix it well. When it's all mixed well, place the loaf in a 9×13 Pyrex pan.

In a small bowl, empty tomato paste. Add about an equal amount of ketchup, stir together until it's thinned to the consistency of frosting. It may require a cup of ketchup.

Spread the mixture over the top and along the sides of the Loaf.

Put in the oven for 70-90 mins, checking every 20 minutes and drizzle liquid over the meatloaf to keep the sauce from burning. Top should be red-brown and splitting in places, juices should be clear when done
